For the second ever Munchies episode shot in LA we chose the gentlemen from Mexicali Taco & Co., Esdras Ochoa and Javier Fragrosso. We wanted to do an episode on Mexicali because we stopped there after a shoot a few months back and were blown away by how good the food was without a whiff of pretension. Take one bite of their shrimp tacos or the carne asada Vampiro and you are transported to a new level of tacqueria consciousness where there is no going back to greasy meat and subpar tortillas. The Mexicali crew decided to take us on a wildly varied food tour around LA. The first stop was supposed to be at Daily Dose Cafe, they were closed, so we just headed to the Park's Finest. We have never filmed at a Filipino restaurant before, let alone a Filipino BBQ spot. Johnny, the owner, tried to do us in by unloading every imaginable dish, with highlights being the BBQ tritip with horseradish cream sauce and the traditional coconut beef. After saying our goodbyes we headed west to Beverly Hills to the country's only kosher Mexican restaurant owned by the country's only hockey-playing Japanese-Mexican gourmet chef, Katsuji Tanabe. Here we had carnita tacos, the "McKosher" burger, and fried chicken and waffles. Chef Tanabe braises beef in duck fat to mimic the taste and texture of pork, which gives his clientele an idea of the flavor profile of the original dish. These guys were is such a serious food coma when we got back to Mexicali, that it took all they had to whip up more food and eat it for our greedy camera. Enjoy! That was the first exchange journalist Gaspar Morquecho recalls having with the revolutionary Subcomandante Marcos on January 1, 1994, in the central plaza of San Cristobal del las Casas, Chiapas, Mexico. Morquecho, feeling a mixture of still drunk and hungover from the New Year's celebrations the night before, interviewed the Zapatista leader minutes after he and his comrades had stormed and taken over the municipal hall of San Cristobal. Twenty years after the Zapatista uprising, VICE traveled to Chiapas to meet Morquecho, the first local journalist to speak with the Zapatista Army face-to-face, so he could recall the events of that fateful day—it was the first indigenous armed uprising in Latin America in the internet age. In 1993, Mexico's then-president Carlos Salinas de Gortari signed the North American Free Trade Agreement (NAFTA) with the presidents of the United States and Canada. NAFTA was meant to establish a globalized tri-national economic front, and it went into effect January 1, 1994. That same morning, as a direct response to the neoliberal policies that were gradually taking hold in Mexico, thousands of indigenous fighters emerged from the rain forests of the Altos region of Chiapas, in southern Mexico, with the intention to take seven municipalities, including San Cristobal. The group called itself the Zapatista Army of National Liberation (EZLN). On January 1, without warning, the EZLN released the Declaration of the Lacandona Jungle, in which the armed group declared war on the Mexican government, and demanded "jobs, land, housing, food, health, education, independence, freedom, democracy, justice, and peace." From that moment on, and during the 12 days that followed, the war between the EZLN and the Mexican Army gripped several towns and villages in Chiapas, resulting in more than 100 casualities and a still-disputed number of disappeared people. What also remains in dispute is the legacy, the impact, and the strength of the EZLN in Mexico today. Text by Luis Chaparro. Romon Kimin Yang, aka Rostarr, is a painter, calligrapher, and filmmaker living and working in Brooklyn. He spent much of his early career focusing on painting and graphic design, blurring the lines between the two. For the past 15 years he has been more widely known for his abstract polymorphic paintings, sculptures, and black and white calligraphic drawings. Rostarr pushes all boundaries in his work, always striving to find freedom within style, medium, and form. He builds upon the visual language he calls "Graphysics," a word that exemplifies the geometric dynamism characteristic in his work. VICE recently met up with him in Mexico City as he prepared for his most recent solo show, Turbo Arena, at Anonymous Gallery. The Pacific currents dragged us all the way to Punta Zicatela's waves, in Puerto Escondido, Oaxaca, the Mexican surf capital. We went there to meet Carlos Coco Nogales, one of the best pro surfers in Mexico. At 10, Coco was living on the streets of Mexico City, when he decided to move to Puerto Escondido with one thing on his mind: search for the planet's biggest waves and surf them as if there was no tomorrow. At 17, he started to appear on international magazines to become one of the best-known surfers in Mexico, specializing in big waves. Coco is a legend in Puerto Escondido, where he has become a mentor for the new generations and an activist in the struggle for the preservation of the beaches in Oaxaca. Ingredients: Cabbage, salt, hot pepper flakes, fish sauce, sugar, garlic, green onions, and carrot. see http://www.maangchi.com/ingredients Directions: 1. Cut 2 pounds of cabbage into thin strips about 2-3 inches in length and ¼ inch wide. Place into a large bowl. 2. Add 1 cup cold water and ¼ cup kosher salt. Mix it well with your hands to properly salt the cabbage. 3. Set aside for 10 minutes. 4. Make kimchi paste by mixing these ingredients in a bowl: 1/3 cup hot pepper flakes, 1 tbs sugar, ¼ cup fish sauce, ¼ cup minced garlic, 3-4 stalks of chopped green onion (1/3 cup worth), ¼ cup's worth of julienned carrot 5. Wash and rinse the salted cabbage in cold water a couple of times. Drain the water. 6. Mix the kimchi paste into the cabbage thoroughly. 7. Put the kimchi into a container, jar, or plastic bag. 8. Press the top of the kimchi down with your hands to protect your kimchi from being exposed to too much air. 9. You can eat it right away, just like salad. Or keep it at room temperature and it will ferment in a few days. Fermented kimchi can be used for kimchi stir-fried rice orkimchi stew, and it will be delicious.
