Although we had spent over a week in Hoi An, there were a number of attractions, buildings, temples and other historic sites we had yet to visit. Thus, on one of our last days in Hoi An, we (Samuel and Audrey) decided to explore the center of the ancient town on our bicycles. We purchased tickets from the local tourist office, which for $6 allowed us access into 5 of the old town's historic buildings. Apparently, you can sometimes get away visiting some of the attractions on the ticket list without paying for the actual ticket; however, we noticed guards checking tickets at several of the places we ended up visiting. Although randomly wandering around Hoi An and visiting many of its local markets - Central and New Market especially - were some of our favorite experiences, we definitely recommend getting a pass to visit some of the main attractions in the Ancient city area. The following are a list of the top attractions and things to do while spending time in Hoi An, Vietnam: A few of the places we chose to visit on this outing included: [1] The Japanese Covered Bridge - a structure which has a pagoda attached to it, and is guarded by the statue of a dog on one side and the statue of a monkey on the other, [2] the pedestrian bridge which is covered in colourful lanterns that light up at night, [3] the local square, where games and performances take place in the evenings, [4] Quang Trieu Cantonese Assembly Hall, which acts as a gathering place for the Cantonese community and is also home to some beautiful architecture, [5] the Assembly Hall of the Fujian Chinese Congregation, which contains a temple dedicated to Thien Hau, the goddess of the sea. We were able to cram all of these sites into a rather condenced period of time by hopping on our bicycles and high tailing it the entire time. If we had to do it over again, we'd definitely take it slower and visit the attractions at much more leisurely pace. One of the potential traps of lingering somewhere for a period of time is that you become complacent and start making excuses for not visiting places. You can always do it tomorrow; however, when time creeps up on you it may eventually be too late. Hoi An, which was once known as Faifo, is a city of Vietnam located on the coast of the South China Sea. This is a travel video that attempts to capture some of the magic we experienced while touring the emerald waters and Karst mountain islets of Ha Long Bay, Vietnam aboard a Vietnamese Junk Boat Cruise for two days. The simply breathtaking scenery compares favorably to Guilin, China and Ko Phi Phi (James Bond Island), Thailand - two other places I've visited over the years. However, if I had to pick my favorite among the three I would without hesitation choose Ha Long Bay; it's simply that stunning - even for a second time around. It's a special experience having the opportunity to tour around Ha Long Bay exploring caves, islands with sandy beaches and paddling around on a kayak. Our two day tour included our own private room on the boat along with all meals and activities; drinks were excluded. It was Audrey's first time staying overnight in a boat. One of the highlights was that we had our own private room; although it was cramped and quite tight in terms of space, we honestly just appreciated having air conditioning and a bed to ourselves. When we shopped around Hanoi for a tour we were quoted a series of different prices; most of the prices were outrageously inflated. Luckily we stumbled across ET Pumpkin, a tour company my friend recommended which offered quality tours at affordable prices. We ended up paying only $65 each for our two day experience which we both thought offered fantastic value. As much as we enjoyed all of the adventure activities, one of our favorite experiences was just sitting on top of the deck on a lounge chair reading a book and enjoying the scenery along the way. With such gorgeous scenery at our disposal and wind blowing in our faces, it felt refreshing to say the least. For those traveling to Hanoi we highly recommend taking the time to do a tour. As we mentioned previously, it's worth your time comparing prices and reviews of tours. For a once in a lifetime experience, it's best to get it right. Ha Long Bay has recently been named one of the New Seven Natural Wonders of the World and has twice been designated a UNESCO heritage site - honors we feel are well deserving. Recently we completed our final main stretch of travels in Vietnam by hopping on a 17 hour overnight bus from Hoi An to Hanoi. This was our third - and final - long haul bus trip in Vietnam. We definitely realized that taking the train was a far more comfortable way of getting from point A to point B; in hindsight, if we could do our trip again, we would pay for train tickets for the entire journey. For this particular bus trip, we had been promised a bus with a toilet which we quickly noticed wasn't provided for us. One of the most frustrating things about taking the bus in Vietnam, is that the travel agents often promise certain creature comforts (such as bathrooms, snacks, etc) that aren't delivered when actually taking the journey. They even go so far as to show you photos of what the bathroom on the bus looks like and a picture of the water and snacks you're supposed to receive. It's frustrating being ripped off like that, especially when it comes to the toilets, because the drivers have a well deserved reputation of stopping very often. By the time they do stop, quite often are bladders are screaming ;) One of the main reasons we wanted to ensure our bus had a toilet had to do with our most recent trip from Nha Trang to Hoi An where our bus (not equipped with a toilet) rarely stopped for restroom breaks. We didn't want a repeat performance of this situation but unfortunately that's exactly what happened. One of the bright spots of this final journey was the marvelous scenery as we were treated to such diversity in landscapes ranging from rolling hills to mountains, riverside to ocean-side views and from farmland to urban hives to activity. We enjoyed munching on some local Vietnamese peanut snacks along the way. They were loaded with quite a bit of sugar and often quite chewy. Peanut based snacks jacked up on sugar are a lethal combination that I have a hard time avoiding. Although we'll miss traveling in Vietnam we won't miss these long journeys which have been exhausting. When I backpacked in South America the average bus trips tended to be longer; however, they were also far more comfortable in terms of padded reclining seats, tasty meals and clean toilet facilities. In our latest travel video we embark on a short hike from our base in Sapa to visit Cat Cat Village (Black Hmong Tribe) early in the morning. With so many different hiking options to choose from it was difficult narrowing it down to just one specific route. Sapa is the perfect launching pad for trekking in the region to nearby minority ethnic villages. Hikes cater for all skill levels, as some villages are just several kilometers away whereas others involve multiple day routes. We started our journey with nothing more than a rough idea of where we were going, as pointed out by the manager working at our hotel. Once we got away from the town we really started to enjoy the hike. Along the way we were treated to spectacular views of mountain vistas, cascading rice terraces, and wooden homes. Not long after we started our journey, we were greeted by three ladies who asked us a plethora of different questions before trying to sell us some homemade crafts. They were polite and kind at first; however, I knew things were about to change as we approached close to the village. The pressure to purchase something started to mount as the ladies revved up their negotiating tactics. Although I had no intentions to buy anything, Audrey was still searching for a few small gifts to send back home. Although we ended up buying something, it was a little off-putting how aggressive they were. Buying from one lady wasn't enough; they wanted us to shop from the entire trio. Audrey eventually ended up buying one more item from a lady who started playing free music for no longer than 10 seconds. Feeling relieved that they finally went away, we continued on with our hike. Once we reached the village we spend time exploring around some of the traditional homes and pathways that were lined by simple shops selling everything from trinkets to cowboy hats. I ended up purchasing that cowboy hat :P As many of you may - or may not - know I'm a man of many hats; especially, those that are unique or what some might describe as being cheesy. Exploring these frontier parts of Northern Vietnam had me feeling a bit like a cowboy, so I suppose it was a rather fitting acquisition to put on top of my head. Feeling tired from the excursion we headed back up the steep serpentine roads that lead to our hotel in Sapa. This is my own style of Spaghetti with Angel Hair Pasta. I do put lots of hamburger meat in my sauce and adding cheese on top is a must. I hope you enjoy it. It may be different from how you would make it yourself, but this is my way of doing and I love it. Spaghetti with Angel Hair Pasta, with lots of hamburger meat, mushrooms, onions and spices. My way of making / cooking "nau an" Vietnamese spaghetti. Vietnamese girl Van Anh can cook show, day nau an will show you how to make da ua yogurt. A simple and fun home cooking show demonstration of making homemade da ua yogurt. Viet Nam Vietnamese cooking Real Vietnamese housewife . Vietnamese spaghetti angel hair pasta hamburger meat sauce cheese Step 1: Ingredients for 6-8servings -1 Package of spaghetti. I personally prefer angel hair pasta. It's thin, similar to Asian noodles. -3 Boxes of mushrooms(about 24 oz) -6 Cans Tomato Sauce(15 Oz) -3 Pounds of hamburger -2 Onions - ½ garlic -2 Oz butter -cheese, salt, sugar Step 2: Preparation Mushroom washed, then chopped like this. -Garlic, minced -Onion cut like this. Step 3: Cook pasta, mushrooms and meat Pasta: To make delicious pasta, add lots of waterlike this. When water boils, add saltto increase flavor to the pasta. Since angel hair is thin, it only takes a few minutes to cook. Do not overcook the pasta. Read the instruction on the package for recommended cook time. Mushrooms: Put a little oil in the pan. Add some garlic, and mushrooms. Stir then lower flame to medium.See the mushrooms shrink like this,I just pour it out to drain. Meat: Start heating the pan with no oil. Put meat in and stir to let out excess water andfat, then let out to drain. Step 4: Making the sauce Heat the pan. Put in garlic and onions for flavor, add meat and mix well. Add a pinch of salt and sugar. Then add the mushrooms. Finally, add the tomato sauce. Stir or mix well to see the meat sauce thicken. Add some salt or sugar is necessary. Wait for it to boil, test tasting to assure desired taste. Lower heat tomedium or low, leave for 10 minutes or so to fully cooked or absorbed. Add butter. That's it for my style of "spaghetti". Step 5: presentation Choose a plate with some depth. Put in pasta and just add the meat sauce on top. Not too much. Sprinkle on cheese or add a slice. I like this served hot, so put in the microwave for about a minute, to also melt the cheese.If you want it spicy, add crushed or pieces of pepper. Include basil for decoration. After having lunch we set off on the second leg of our journey for the day en route to explore Ta Van Village (Dzay Tribe) in the mountainous region of Sapa, Vietnam. After a long hike in the morning lunch was anything but relaxing. The Black Hmong ladies who had followed us for the duration of our hike, making animals out of leaves, smiling and peppering us with questions and grinning from ear to ear suddenly changed their demeanor in complete 180 degrees. "You buy from me. Then I go home." "You don't buy one. Buy two." "Buy from me. I made you horse." Although I could see this coming a mile away, I still found it annoying. Although I appreciate these ladies depend on tourism to earn a living, I don't feel as though tourists should feel such extreme pressure to buy something. One particular gentleman at our table, who steadfastly refused to buy anything was harassed to point where he did eventually purchase a tiny trinket, just so that he could eat his lunch at peace. When it comes to vendors, touts or service providers in the travel industry, I'm all about rewarding bad behavior and not giving in to the pressures of pressure tactics. For example, in this particular situation, the ladies realize that if they press hard enough they'll eventually annoy the heck out of tourist to the point they buy something. Compounded by the fact they're tired from the long hike, more likely than not, they'll be willing to pay a bit of money to have a quiet lunch. Although lunch was bland, I was immediately thrilled that my stomach could handle the noodles, as just mere hours before I had still been suffering from a severe case of food poisoning. The morning hike had tested my fitness levels and I had to push myself to the max to keep up with the rest of the group only being roughly around 70% of my normal self. My legs felt like jello at this point in the day and I couldn't believe we still had another significant portion to cover for the rest of the day. Mentally, I was preparing myself for what I felt I couldn't possibly physically accomplish. Luckily, the second leg of the journey was both shorter and less physically demanding. Roughly speaking, I think we walked only 1/3 of the distance that we covered in the morning and there was less variability in the terrain on this portion of the hike. When we finally reached Ta Van Village I felt a sense of relief knowing I could retire for the evening. Prior to dinner I spread all of my belongings out by my makeshift bed and napped for nearly two hours. Our traditional home-stay was a basic wooden two story house which featured mats laid on the floor with a mosquito net covering them. I feel confident enough, that it wouldn't have mattered what the accommodations looked like for the majority of our group. We were all so tired from the hike we could have slept on top of a rock. Although dead simple, in terms of style, I slept like a baby given how absolutely knackered I was from the trek. Our latest travel video documents our impossibly long 13 hour overnight sleeper bus journey from Nha Trang all the way to the cultural hub of Hoi An, Vietnam. Having recently been sick in Nha Trang, we both didn't really get to enjoy much beach time. Instead we were confined to our hotel beds trying to shake a fever, runny noses and overall sheer exhaustion. Thus, when it came time to board this particular night bus neither of us were close to being 100% healthy; however, given that we had to pick up the pace to finish our itinerary in Vietnam, as we had scheduled, we didn't have much choice in the matter. Once on board the bus, we had bunk like sleeper beds near the front of the bus that were far too small for our large western bodies. If you can imagine, it would be like trying to sleep in kid's bunk-bed as a mature adult. To say it wasn't all that comfortable would be an understatement. If the uncomfortable seating arrangements wasn't enough to handle, the trip itself was an arduous affair as we traveled along serpentine bumpy one lane roads. Our driver wasn't exactly chilled out, as he aggressively passed vehicles as though we were playing a racing car video game as opposed to transporting precious real lives. To say that our driver used the bus horn liberally might be the understatement of the century; we ended barely able to catch any sleep. When we were fortunate enough to doze off it was only for a brief moment as a sudden swerve or the sounds of the horn made us reluctantly regain consciousness. Although we got very little sleep our mood improved considerably after arriving in Hoi An, a sleepy cultural hub smack dab in the middle of Vietnam. On our first day of our Mekong Delta river cruise tour we hopped on a rowboat for a ride down some lush green vegetation sections while wearing our Vietnamese conical hats in the southern region of Vietnam. The conical hats, purchased for $1 each, were invaluable as the heat and humidity was literally cooking us in the sun prior to purchasing these local style hats. We were fortunate enough not to have to do any of the paddling, as this was taken care of by some local temporary Vietnamese guides. Along the way we passed by some other Vietnamese guides who at first appeared to be very friendly, but quickly went from 'hello' to repeatedly saying 'tip' while motioning with their arms to our driver. This is the type of gesture that can 'taint' a travel experience; however, we didn't let it get to us. Overall, we had a lot of fun and we couldn't help but poke fun of each other along the way. After a long train ride from Saigon to Nha Trang, we decided to reward ourselves with a tasty Vietnamese meal at a nice restaurant. Lanterns is one of my favorite restaurants in Vietnam, a place I discovered with my parents while traveling here in 2011. Initially I couldn't find where it was. I thought for sure I knew exactly where it was located given my previous visit only two years ago; however, it has since moved to a new location not far from the old one. It was absolutely packed when I came back here with Audrey for the first time which was hardly a surprise. One of the reasons I love it so much (aside from the awesome food and service) has to do with contributions the restaurant makes around the community helping to feed those who are less fortunate and providing assistance for children at orphanages. Whenever we can, we like to support businesses that are involved in the community and give something back to those in need. Our dinner consisted of Vietnamese lemongrass tofu and clay pot shrimp. We had high expectations for the lemongrass tofu, a dish we first tried together while exploring the Mekong Delta region of Southern Vietnam. The dish served at Lanterns didn't disappoint although it was quite different from the one we had previously with more of a sweet and sour taste. Although it was tasty, I preferred the dish we had while touring the Mekong Delta in a small restaurant on our way back to Saigon. The caramelized clay pot shrimp was amazing! With every bite the sweet caramel flavor oozed through every morsel of shrimp we put in our mouths. It's hard to go wrong with anything that is caramelized. Overall, the meal was fantastic and we plan on heading back soon to try their hot pot which we've heard is excellent. One of the most pleasant surprises on the third day of our Mekong Delta tour was climbing up the 400 + steps to reach the Buddhist temple known as Chua Hang or Cave Pagoda located on Sam Mountain in Chau Doc, Vietnam. Given that we had either been planted in a van and/or boat for the past couple of days, it was a welcome relief having the opportunity to get some rigorous exercise even given the extreme heat and humidity. At this particular point of the tour, we were starting to get frustrated that we were spending so much time in a cramped situation when we thought our tour would have included more walking and opportunities for exploration. Although, having the opportunity to climb up to this cave slightly redeemed our opinion of the tour, it still was a bit too little too late. The ascent up the stairs was exhausting given the sweltering heat and humidity but the views were well worth it as small fishing communities and seemingly endless rice fields extended off far into the distance. For several minutes, I just gazed out at the surroundings down below me realizing how high we had climbed to reach this point. The Buddhist temple was certainly more quirky than usual. In particular, a reclining Buddha was sporting sunglasses. Without fail, I pulled out my camcorder and dSLR camera to capture this peculiar attraction. I honestly live to capture these oddball travel moments; it's what has kept me on the road as a digital nomad for years on end. I've seen just about anything in and around temple areas, including smoking monks and other 'interesting' behaviour, but this was indeed the first time to see Buddha donning shades.
