We made an Almond Caramel Coffee Cake in our rice cooker. Ingredients: 1 package (150 grams) pancake mix, 1 egg, 2 ounces almond powder, 1 packet of caramel Nescafe instant coffee, 3/4 cup soy milk, sugar to taste (we use 2 tablespoons). Mix it all together and bake. Time is up to the rice cooker. Our cooker is older and takes 2 complete heating cycles to bake a cake. Top with powdered sugar, frosting, fruit or just eat plain. Finished cake has a light caramel almond taste, some caffeine to wake you up, and is not too sweet. Enjoy!
